Chocolate Scan Bran Cake

Serves 6

Ingredients

  • 6 GG
  • 40g of self-raising flour
  • 2 teaspoons of stevia
  • 2 tablespoons (10g) of unsweetened cocoa powder
  • 2 eggs
  • 1 egg white
  • ¾ cup (175ml) of skimmed milk
  • 1 tsp of vanilla essence
  • 1 tsp of icing sugar
  • coconut oil spray

 

To serve/ extras (optionalal):

  • 1 tsp Chocolate sauce (multipower proten crean)
  • Skinny foods custard sauce
  • Qurak
  • Dark chocolate chips

Method:

  1. Preheat oven to 180c
  2. Heat milk until warm and then pour over the crisp breads and allow to soak until softened.
  3. Once crisps breads are softened, add the entire mix to a blender with the stevia, vanilla and cocoa powder until you have a smooth batter.
  4. Stir in the flour.
  5. Beat in the eggs and egg white and add to a cake tin greased with some low-calorie spray (I also lined with some parchment paper).
  6. Place in the oven and bake until firm and a skewer entered into the centre comes out clean (approx. 25 mins)
  7. Allow to cool and then sprinkle with the icing sugar.
  8. Serve with toppings of choice
